Happy ♥ Heart

On this Valentine's Day, I am lucky enough to have 4 sweethearts! It is my lovely family who fills my heart with joy, love, and gratitude.

And it wouldn't be Valentine's Day without a little chocolate.  I made some truffles for my Sweeties and I made a Truffle Tutorial for you, my dear readers (yes, all 5 of you!):

These truffles are so easy to make and they're delicious!  The recipe makes 42 but I halved the recipe because
I forgot to buy a second box of baking chocolate I didn't think we needed to have 42 truffles for just the 5 of us!  Here's what you need for the HALF recipe:

18 OREO Chocolate Sandwich cookies
1/2 of an 8-ounce package PHILADELPHIA Cream Cheese, softened
1 (8-ounce) package BAKER'S Semi-Sweet Baking Chocolate

Put cookies in a resealable plastic bag and crush into fine crumbs with a rolling pin or mallet:

Place crumbs in a mixing bowl.  Add cream cheese; mix until well blended:

Put the mixture on a piece of wax paper and divide it into 21 balls, each about 1-inch in diameter.

Roll the pieces into balls:

Place the chocolate in a medium bowl and melt the chocolate in the microwave.  I just used the "melt chocolate" feature on my microwave; if yours doesn't have this feature, try a minute at a time, stirring occasionally.

Dip the balls in the chocolate and place on a wax paper-covered cookie sheet.

Refrigerate until firm, about 1 hour. ENJOY!
Store leftover truffles, covered, in refrigerator.

Happy Valentine's Day!
